Here are some simple and delicious recipe ideas with the Smart Cuisine Diwali collection: Cucumber salad with basil : Refreshing and full of flavour, this salad is perfect to accompany your summer barbecues. 2 cucumbers 1 lemon A few pine nuts 8 basil leaves 5 cl olive oil 2 tsp mustard salt and pepper Wash the cucumbers and cut into thin strips with a vegetable peeler. Place in a colander with salt to drain for 30 mins. Wash the basil leaves, set aside 4 and chop the remaining leaves. Lightly crush the pine nuts. For the vinaigrette: mix the mustard, chopped basil, lemon juice, olive oil, salt and pepper. Pour over the cucumber slices and garnish the salad with the reserved basil leaves and pine nut pieces. Fruit salad balls : An explosion of colours and flavours that will delight your guests’ taste buds, ideal for a light and refreshing end to a meal. 2 very ripe yellow melons (refrigerate for at least 2 hours to keep them fresh) 4 ripe yellow peaches (chilled in the fridge for at least 2 hours) 150 g blackberries 2 tablespoons lemon juice A few mint leaves for decoration 1 melon baller Cut the melons in 2 and remove the seeds with a tablespoon. Wash the peaches and pat dry. Remove the skin from the peaches using a peeler. Using a melon baller, scoop out 1 melon and 4 peaches. Place the fruit balls in the other 2 melon halves and drizzle the fruit balls with a spoonful of lemon juice. Add the blackberries. Garnish with a few mint leaves.
