Recipe: Fennel, Parmesan and Bread Gratin

Ingredients for 4 people

• 3 small fennel bulbs, our beauty and well-being ally, don’t hesitate to add a few fennel seeds to the recipe
• the juice of ½ lemon
• 6 firm-fleshed potatoes, “Ratte du Touquet”, it’s the best!
• 3 apples, any you want, they’re all delicious
• 7 tablespoons of olive oil (it can withstand 190°C max)
• 20 cl of vegetable stock, without salt if you have it (parmesan is already very salty)
• 3 slices of day-old country bread or older
• 50 g of freshly grated parmesan

Preparation

1. Preheat the oven: Preheat your oven to 180°C.
2. Prepare the vegetables and apples:
– Cut the base of the fennel and remove the small damaged leaves.
– Set aside in the Smart Cuisine dish.
– Peel, wash and slice the potatoes. Add them to the fennel.
– Wash, remove the core and slice the apples. Place them in the dish with the other vegetables.
3. Season and cook:
– Mix the vegetables and apples with 4 tablespoons of olive oil, salt and pepper.
– Crumble half a stock cube, add a glass of water and bake for about 45 minutes. Add a little water if necessary.
4. Prepare the crumble:
– Cut the bread into small cubes and crumble it lightly.
– Mix it with 3 tablespoons of olive oil.
5. Finish the dish: 10 minutes before the end of cooking, add the bread and sprinkle with parmesan.
6. Serve: Take the dish out of the oven and place it directly on the table.
