Healthy and quick banana pancakes

For a snack, or a healthy breakfast… Banana pancakes are a pleasure to keep in line! 

 

Ready in less than 20 minutes with a simple ingredient that we all have at home, these banana pancakes are sure to brighten up your next brunch. Just mix a few simple ingredients to make these pancakes that will delight everyone.

Get out a bowl and let’s make a delicious breakfast or snack that will enchant young and old!

 

Ingredients for 4 people : 

  • 2 bananas
  • 2 eggs
  • 140 g wheat flour
  • 8 g baking powder
  • 25 cl almond milk
  • 1 pinch of salt

 

Preparation steps

 

-In a bowl, mix the wheat flour, baking powder and salt.

-In another bowl, mash the bananas with a fork, add the eggs and almond milk and mix.

-Add the dry ingredients to the wet ingredients and mix. Leave to stand for a few minutes (ideally 5 minutes).

-Heat a lightly oiled pan over medium heat. For each pancake, pour in 3-4 tablespoons. Cook the pancake for 1-2 minutes depending on the thickness. 

-Serve hot, with a little maple syrup or other toppings to taste.

 

Tips for successful pancakes

 

Here are some tips and tricks to help you make your pancakes:

  1. Don’t over mix the batter, so you don’t get sticky, rubbery pancakes.
  2. We advise you to let the batter rest for 5 minutes before baking your pancakes. This will ensure a lighter and fluffier pancake texture.
  3. Lightly oil the pan. Simply apply a little oil to the paper towel to cover the pan.
  4. Pancakes need to be cooked at an even temperature to get a nice golden colour. To do this, you need to make sure you monitor the cooking process.

A plate of banana pancakes is as simple as a blank canvas. If you need a little inspiration, here are some ideas: 

 

Maple syrup or pancake syrup

You can’t go wrong with the classics. A simple drizzle of maple syrup over your pancakes is always a good idea.

 

Honey and peanut butter

For a healthier option, opt for honey. Add a dollop of peanut butter for a delicious breakfast.

 

Fruit and whipped cream

Add colour to your plate with fresh berries, citrus wedges or even banana slices. You can also add whipped cream, an extra touch that goes perfectly with the fruit. 

 

Jam or jelly

Jam or jelly by the spoonful is a fruity upgrade that everyone loves. Add powdered sugar for extra flavour. 

 

Caramelised banana

Another way to accompany and serve your pancakes is to make caramelised banana slices. Simply melt a tablespoon or two of butter in a saucepan, add the banana slices, brown sugar or vergeoise sugar and allow to caramelise slightly for about 5 minutes. Then serve immediately on top of the pancakes.

 

 

How to store banana pancakes?

 

Don’t throw away your extra pancakes! You can store them in an airtight storage box in the refrigerator for up to two days. Simply reheat them in the microwave when you are ready to eat them.
